Adapted from the Rose Bakery cookbook, Breakfast, Lunch, Tea.
1 1/2 large, ripe bananas (broken in half or thirds or some other fraction)
1 1/2 tsp honey
2 tbsp apple sauce
1-2 tbsp lemon juice
1/2 cup plain non fat yogurt
1/4 cup whole milk (any percentage of fat is fine, as is soy or more yogurt, this is just what I happened to have)
Put the bananas in a blender or food processor and pulverize before adding everything up to the milk. Stream in milk while running the machine, adding more if it’s too thick. Process until light and bubbly. Pour into something and chug! That’s right, I’m bringing class to your breakfast table! Aren’t you proud, mom?
